Oatmeal 3 Ways

Okay, so I have a confession to make.

I, Nadia Mora, love oatmeal….

But I don’t just love it like other people love it, I LOOOVE it. I’ve had cravings for oatmeal the way people crave ice cream and sushi, it’s intense I know. But this mild obsession has resulted in something good, because today I am sharing with you three of my favorite and most frequent oatmeal breakfasts! (which I have also gladly enjoyed for lunch and dinner!)

OATMEAL PANCAKES

Ingredients:

1 cup of oats

1 banana (not a fan of bananas? Sub with an apple!)

1 egg (not mandatory, but adds protein and helps with consistency, sub with applesauce)

1 tbsp cinnamon

2 tbsp flax seed (optional)

Directions:

I pop everything into my NutriBullet with a splash of water and blend. If you do not have a NutriBullet/blender…

  1. Chop up the oats. Yes, chop them like you would nuts, until they are more of a powdery texture.
  2. Smash banana, it helps if it is really ripe.
  3. Add remaining ingredients and mix it all together..and you know that it’s the best of both world! (5 bonus points if you caught that!)
  4. Heat skillet to medium heat and spray non-stick oil or melt 1 tsp butter (I used coconut oil). Once skillet is hot, pour mixture and let cook for a couple of minutes on each side. I watch the heat, usually keep it med-low because it takes a while to cook and we don’t want it to burn. You can see if it’s ready to flip by lifting up the edge with your spatula; if it’s too “wet”, it’s defintely not ready to flip. I always flip the first one too early and it falls apart, so don’t worry! 🙂

With my cousin, we always make just one huge one for each of us, but if you prefer a stack of little ones, go for it!

Suggested Toppings:

Nut butter and granola

Banana, strawberry, maple syrup

Nutella and banana

Greek yogurt, jelly and granola

OVERNIGHT OATS

Gotta thank Pinterest for this one!

Ingredients:

Equal parts oats and milk/milk alternatives

3 tbsp chia seeds

1 tbsp cinnamon

1 tbsp honey/sweetener of your choice

Directions:

  1. Add ingredients to mason jar, mix with spoon and cover with lid.
  2. Store in refrigerator overnight.
  3. Wake-up, top and enjoy!

Suggested Toppings:

Nut butter and jelly

Berries, bananas and seeds (chia, flax, wheat germ)

Almonds and brown sugar

OATMEAL COOKIES

I was casually strolling the aisles of Home Goods when I stumbled upon this adorable mason jar + cookie mix! I am going to share a recipe I found years ago on blogilates.com and loved it! It’s a bit more simple than the mason jar mix, and healthier, too!

Ingredients:

1 cup of oats

1 banana

1 tbsp cinnamon

1 tsp vanilla extract

Optional add-ins:

½ cup white chocolate chips

½ cup chopped almonds

Directions:

  1. Preheat oven to 350°F.
  2. Smash banana with fork, helps if banana is ripe.
  3. Add remaining ingredients and mix until everything is well combined.
  4. Form 1 ¼ inch balls and bake at 350 for 8-10 minutes.
